Pusa Jwala, also known as 'Indian Finger Hot Chilli', is a very prolific variety from India that produces long, wrinkled, Cayenne-type chillies which start green and ripen through orange and then to red. The word 'jwala' means 'flame' in Hindi, which is quite apt! When harvesting the chillies it's recommended to cut them off rather than pull them because the delicate plants can be damaged very easily. The thin-walled chillies have an excellent flavour, and they also dry very easily and make a very tasty powder, or alternatively can be used whole in curries. Pusa Jwala is a typical Indian chilli and one of the most popular ones grown in India. It's great for spicing up curries and other Indian dishes, such as bhajis, biryanis, dals and pakoras.
