Hungarian Yellow Wax

Hungarian Yellow Wax is an heirloom variety from Hungary and is similar to its cousin the Hungarian Hot Wax, except it has none of the heat. The plants have a fairly compact growth habit and produce good yields of large, chunky, elongated peppers which are tapered to a blunt tip. They start light green and ripen through yellow, orange and then to red, but are normally eaten at the yellow stage for their crispy texture and citrus-like flavour. However, they are still very tasty when eaten at the orange or red stage. Hungarian Yellow Wax peppers can be used just like Bell Peppers and are good in stir fries, salads, salsas, soups, stews and casseroles. They also make a great choice for stuffing or grilling. Hungarian Yellow Wax is a very similar variety to the Xcatic chilli from the Yucatán Peninsula region of Mexico and can be used as a substitute if necessary.
