Aji Guaguao

Aji Guaguao, also known as 'Aji Guaguao Cubano', is a wild variety from the Sierra Maestra mountain range in Southeastern Cuba, a mountainous region that rises sharply from the Caribbean coast and has a long history of guerrilla warfare. The plants grow to about one meter in height and produce good yields of Tabasco-like chillies which start green and ripen through orange and then to red. When fully ripe the fruit turns soft and falls away from the calyx very easily (deciduous). Aji Guaguao chillies have a very good flavour and are great for spicing up soups, stews, sauces and rice dishes. They also dry very easily and make a very tasty powder.
